Chicken Pineapple Kebabs

The pineapple tenderizes the chicken and also gives a little sweetness. We can all use a little sweetness!  

Chicken Pineapple Kabobs Marinade:

1 C. canned Pineapple chunks, in it's own juice (reserve liquid)

2 - 4 TBS >Doc's Heavenly Habanero or >ExplosiveBBQ

1 1/4 tsp gr. Cumin

1 tsp gr. Coriander

1 tsp Garlic crushed

1 1/4 tsp Chili powder

1/2 tsp salt

1 C. Plain Low-fat Yogurt or Greek Yogurt

1 TBS Olive Oil

1 lb Boneless Chicken, skinned

  • Drain pineapple liquid (about 1/2 cup) into a large mixing bowl

  • Blend with Doc's Habanero Heaven, ground cumin, ground coriander, garlic, chili powder, salt, yogurt and pineapple juice. Mix well.

  • Cut the chicken into bite-sized cubes

  • Add to the pineapple spice mixture and leave it marinade for about

    1 - 1 1/2 hours.

Prepare the Kabobs:

Cut peppers into bite-size chunks (discard seeds)

1/2 each Red, Yellow and Green Pepper

1 Large Onion, cut in chunks

Grape Tomatoes (whole or sliced)

  • Alternate the peppers, onion, tomatoes, pineapple chunks and chicken onto wood or metal skewers

  • Place Kabobs onto a flameproof dish or in a grill pan

  • Grill turning and basting the chicken with the marinade regularly for about 15 min.

  • Serve with a nice Green salad, mixed with one of your favorite Doc's Dressings on the Recipe page
