Cajun Deviled Eggs

Ingredients:

12 Eggs, boiled, peeled

1 1/2 TBS Sweet Pickle Relish

1 TBS Apple Cider Vinegar

1 TBS Sugar or sweetener of choice

2 TBS Doc's Spicy Island Jalapeno

(or Heavenly Habanero to kick it up a notch!)

1/4 tsp ground Pepper

1/4 tsp Salt

Paprika to taste (or not)

Pimento-stuffed Olives, sliced

Directions:

  1. Slice the eggs in half lengthwise. Carefully scoop out yolks into a bowl

  2. Place whites on a serving platter and set aside

  3. Add all remaining ingredients except paprika and olives to yolk

  4. Using the back of a fork mash the yolks until blended

  5. Fill each half with a portion of filling, rounding off the top

    (You could also use a pastry bag)

  6. Sprinkle stuffed eggs with paprika; place an olive in center of each one
