Turkey Nachos


1. In pan cook until the liquid dissipates:

1 lb ground Turkey or Beef

1/4 C. Onion, chopped finely

2. After turkey cooks, add:

1/2 tsp Cumin

1/2 tsp Garlic Powder

Salt & Pepper to taste

Set aside to cool

3. In another pan, warm:

1 – 15 oz Pinto Beans that have been drained

1 tsp Butter, added

After heated through, mash or use a wand blender

Set aside to cool 

4. In a Sheet Tray in LAYERS: Layer restaurant style chips in the center, working out to about 2/3 of the tray, and adding:

Turkey

Beans

Black Olive Slices

Scallions, sliced

Doc’s More My Speed or Doc’s Garlic Rush or Doc’s Mash

Monterey Jack and or sharp Cheddar Cheese, grated

Cilantro, chopped

5. Repeat layers with cheese on top then pop in oven and bake at 400 degrees until the cheese melts (about 3 - 4 min)

Separate into servings or just let everyone share off the tray!
